Like ginger, fresh turmeric is a very different animal to the ground version. It has a strong, hot, earthy tang which, used in very small amounts, can transform very simple foods like rice and soup into more exotic dishes. Try in curries and lentil dishes. For best results, use thinly sliced sticks or grate the root, but beware – fresh turmeric stains like pollen!
